Donut Baking!

    Hello everybody, today we were in the mood to bake something delicious. We really wanted to bake doughnuts so mom got on the computer and found a recipe for Baked Pumpkin Ice Cream Glazed Donuts. Now doesn't that sound amazing! Well, we decided that that would be a good thing to bake on a fall day. So we got all the ingredients and started mixing, tasting, scooping some pumpkin mix into a pan, and then we baked the donuts. Then we took them out of the oven and tasted them and loved them, so we thought you would like it too. Here is the recipe! Hope you like them as much as we did! 

Baked Pumpkin Ice Cream Glazed Donuts



3/4 cup all purpose flour
1 tablespoon baking powder
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 cup granulated sugar
1/4 cup plus 2 tablespoons canned pumpkin
1 large egg
1 teaspoon vanilla
2 tablespoons instant vanilla pudding mix
3/4 cup ice cream (measured before melting)
1/2 cup powdered sugar
1/4 cup heavy cream (you my need a couple tablespoons more if too thick)

1. Preheat oven to 350 degrees F. and spray donut pan with non-stick cooking spray.

2. Place flour, baking powder, salt, cinnamon, sugar, pumpkin, egg, vanilla and pudding mix into a large mixing bowl.

3. Place ice cream into a microwave safe bowl and heat for 30 seconds or until just barely melted. Pour into mixing bowl and combine with other ingredients until well combined. Scoop batter into prepared donut pan (We used my cake pop pan for doughnut holes!)   Bake for 15-20 minutes, until baked through. Remove and let cool for 10 minutes before removing from pan.
4. To prepare the glaze, place powdered sugar and cream into a bowl, whisking to combine. Add more cream if needs thinning out. Dip tops of donuts in glaze and serve!
Makes 9-11 donuts

Amazing Adventurous Hikes!

Hi! I'm in a tree, on a beautiful hike, in Eagle Crest!
It's wonderful, it's sunny, and when it's sunny we love to explore and go on hikes.
 I'm just going to show you some amazing pictures of our hikes in Eagle Crest. Shall we have a look?

This is the first hike that we took along the Deschutes River.
It was a nice hike, perfect temperature.

We are on a big boulder! It was a little difficult getting up but we made it!

This is a different rock I climbed up.  It was very steep so it was harder than the first one.
This is our second hike to Cline Falls.

There were a few little waterfalls around the big waterfall.

This is our final hike, Smith Rock.
We did the full loop around Smith Rock.
 Starting with the easy trail, then it went into the medium trail, the last part was the difficult trail!!
And let me tell you something, the difficult trail was difficult.
 It was steep, and rocky.  We were high above the ground.  It was awesome!!
We found a little rock with a hole in it, so we all climbed in.
We made it to the top!
It was hard but it was worth it and the view was beautiful.
You could see absolutely everything! 
We had a wonderful time exploring new places, climbing on rocks and trees, and conquering mountains.

Wood Working With Grandpa!

We went to Grandpa and Grandma's house to do a wood working class with Grandpa. Grandpa showed us all the tools we will be needing for our project.
                        First we need to cut the wood. Grandpa shows us how to use his power saw. We need to put safety glasses on so saw dust doesn't get in our eyes when we cut. We have to measure the wood and mark it so we know where to cut it. Here I go!
Grandpa shows Kylia and Zoie how to sand the wood pieces I cut.

Grandpa puts all the pieces of wood together so we can nail them together with a nail gun. Here I go!!
Kylia's turn.   Great job!  We are almost done!  Grandma and Mommy brought home a little can of green paint to match our room. We got to wear Grandpa's old paint shirts. We painted it and we painted it. It was so much fun. Here's the finished picture of the box in our new room that we set up down stairs in the closet. Thanks Grandpa for teaching us how to build a box.

Light -up Frisbee

  
   Justin and Auntie brought light-up Frisbees to the Mitchell Family Campout. One  night we brought them out and a bunch of people played toss with four of  the Frisbees.  We were in a big circle and whoever wanted to play was welcome to play, and others just watched.  Some of us had head-lights and others had glow sticks.  It was pitch black so really you were just throwing to light.  Most of the time you really didn't know who you were throwing it to. That's part of why it was fun.
    I also got to know my cousins Isaiah and Emma better, and after the Frisbee game we all played on the tire swing before bed. It was super fun!
   Anyways, here are some pictures my Mom took of the Frisbee game. Hope you like them!
